Popular burger chain opts for beef tallow to improve french fries quality
Steak n Shake, a popular fast-food chain, has recently announced that it will be making a change in how it cooks its french fries. The chain, which has locations all across the United States, including the Midwest and the South, is planning to switch to using 100% all-natural beef tallow when preparing its fries. This decision comes after Steak n Shake conducted comprehensive research and analysis to determine the most effective method for delivering high-quality fries to its customers.
According to Steak n Shake’s Chief Global Development Officer, Kristen Briede, this change is aimed at providing customers with the best possible fries. Briede emphasized that consumers expect and deserve the highest quality, and the adoption of 100% beef tallow aligns with the company’s commitment to excellence.
Steak n Shake’s recent press release highlighted the historical significance of using tallow to cook fries. The company claimed that when fries were first created centuries ago, they were traditionally cooked in tallow. By returning to this traditional method, Steak n Shake aims to enhance the taste and authenticity of its fries, as noted by another executive within the organization.
By the end of February 2025, all Steak n Shake locations will be using beef tallow exclusively to fry their potatoes. However, it remains unclear whether other fats will be used alongside beef tallow or if customers will have the option to request fries cooked in different fats. A recent survey conducted by Steak n Shake revealed that approximately 10% of respondents expressed a preference for fries not cooked in beef tallow, suggesting that customer preferences may vary.
As the deadline approaches for implementing this change, Steak n Shake is committed to providing customers with the best possible experience by enhancing the quality and taste of its signature fries. The company’s dedication to utilizing authentic methods and high-quality ingredients underscores its ongoing efforts to exceed consumer expectations.
Founded in 1934 in Normal, Indiana, Steak n Shake is currently owned by Biglari Holdings, Inc., based in San Antonio, Texas. The chain, with over 400 locations operating or franchised throughout the U.S., has established a reputation for its commitment to excellence and innovation in the fast-food industry. By embracing the tradition of using beef tallow to cook its fries, Steak n Shake continues to uphold its long-standing tradition of delivering exceptional quality and taste to its loyal customers.
